
Ingredients – Serves 4
- 800g chicken breast cubed
- ½ tbsp olive oil / coconut oil
- 1 large onion, sliced
- 3 garlic cloves, grated finely or crushed
- 1 tsp True Ceylon Cinnamon
- ½ to 1 tsp chilli flakes (more if you like it hot)
- 1 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp Garam Masala
- 2 tsp Spice&Easy Turmeric, Ginger & Black Pepper Blend
- 400g chopped tomatoes
- ½ tsp salt (or to taste)
- 2-3 tbsp coriander leaves, chopped for garnish
- 300g Basmati Rice to serve or Pilau Cauliflower Rice for a lighter option
- 200g Greek yoghurt 2%
Preparation
Finely chop onion and garlic
- Toss the meat in flour. (If the meat is in a plastic bag, I just add the flour to the bag and shake with some vigour)
- Heat oil in frying pan, add onion and garlic and fry for a minute or two then add meat and brown
- Add spices and stir constantly for a couple of minutes, so the heat releases the flavours
- Transfer meat to the slow cooker, add tomatoes and season with salt and pepper
- Place lid on and cook on High for 4 hours
- About 15 minutes before you want to serve, add yoghurt and stir in thoroughly.
Serve with Basmati rice or Pilau Cauliflower Rice for a lighter option.
