The blend of spices in curry powders may vary but generally include turmeric, cumin, coriander, ginger, chili, black pepper and more. This amazing mix of aromatic spices, with a little heat, creates quite a punch.

Healthy Chicken Curry

This chicken curry recipe is generous with the veggies to keep the calories low and of course you can add more of your favourite veg.

Ingredients

  • 1 large onion, chopped
  • 1 tbsp chopped fresh ginger (1 tsp dried ginger)
  • 1 red chilli, diced
  • ½ tbsp ground coriander (available at Spice&Easy)
  • ½ tbsp ground cumin (available at Spice&Easy)
  • ½ tbsp curry powder / Spice&Easy Indian Spice Blend
  • 2 red peppers, seeded and diced
  • 4 skinless chicken breasts, diced
  • 1 small cauliflower, cut into florets
  • 400g tin chopped tomatoes
  • 200g baby spinach

Instructions

STEP 1
Blend the onion, ginger and chilli with a splash of water in a small blender. Tip into a pan and bring to a simmer. Add the spices with a pinch of salt, cook for a minute, then add the peppers, chicken and cauliflower, stir into the curry paste and cook for another 5 minutes.

STEP 2
Add the chopped tomatoes, half-fill the tin with water and tip into the pan. Simmer for 25 minutes until the chicken is cooked through. Cook for another few minutes if the sauce is too thin, then stir through the spinach until wilted. Season and serve.

Healthy One-Pot Cauliflower and Chickpea Curry

This healthy one-pot cauliflower & chickpea curry takes only 30 minutes to make so it is the perfect dish for busy weeknights. Serve this tasty curry over your choice of grain or rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion (~1/2 onion)
  • 1 tablespoon Spice&Easy Indian Spice Blend
  • 1/4 teaspoon Spice&Easy smoked paprika
  • 2 cloves garlic, minced
  • 6 cups chopped cauliflower
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (13.5 oz) can coconut milk full/half fat
  • 1 (15 oz) can or 2 cups cooked chickpeas (drained)
  • 3 cups chopped kale / spinach / chard
  • 1/4 teaspoon sea salt (adjust to taste as needed)
  • Garnish with fresh cilantro

Instructions

  1. Add olive oil to a large, deep skillet over medium-high heat.
  2. Stir in onion, curry powder / Spice&Easy Indian Spice Blend and smoked paprika and cook for 2-3 minutes or until onion is translucent and tender.
  3. Stir in garlic and cook for another minute.
  4. Add cauliflower and sauté for 3-4 minutes. Stir in the tomatoes and coconut milk. Bring to a simmer and cook for 12-15 minutes.
  5. Stir in the chickpeas, chopped kale, chard, spinach and salt. Cook another 2-3 minutes until the greens are wilted and tender.
  6. Serve over your favourite grain rice and garnish with fresh cilantro.
